Food Hygiene Level 2 for Yacht Crew — Which Certificate Is Accepted on Your Yacht?

Every stewardess on a commercial superyacht is required to hold a Food Hygiene Level 2 certificate before joining. It is mandatory under EU Regulation 852/2004 and the Maritime Labour Convention (MLC) for anyone who handles, prepares, or serves food on board. As a stewardess you are not just serving at the table — you are managing the crew mess, monitoring provisioning stock, checking expiry dates, handling food service for guests, and working alongside the chef during charter. Food hygiene is a daily operational responsibility, not a one-off qualification.

The question most new crew ask is not whether they need it — they do — but whether the online certificate they are looking at will actually be accepted on their yacht. Here is the answer: this CPD accredited Food Hygiene Level 2 course is fully valid and accepted across all major international flag states operating in the Mediterranean and Caribbean. It meets EU Regulation 852/2004 and MLC food safety requirements — the standard the entire superyacht industry uses regardless of where the yacht is flagged.

The one exception is UK-flagged yachts under the MCA, which require an in-person course. For other flag state including EU and — Cayman Islands, Marshall Islands, Malta, Panama — this online course is exactly what you need. And those flag states cover the overwhelming majority of the superyacht fleet in the Med and Caribbean.

Port state control inspections on charter yachts actively check food hygiene certificates. A captain cannot have uncertified crew handling food on board without creating a compliance issue for the vessel. Most chief stewardesses will ask to see it before they even schedule an interview. Should I get Food Hygiene Level 2 to work on Yachts ?

The course takes approximately 4 hours to complete online. You work through 6 modules and finish with a 15-question

  multiple-choice exam. Complete it before you start dockwalking — most chief stewardesses ask to see it alongside

  your STCW at interview stage.     

The course covers food safety law, HACCP principles, micro-organisms and food poisoning risks, contamination      

  hazards, and cleaning and disinfection procedures. Every module applies directly to superyacht operations — crew

You need STCW Basic Safety and Yacht training for Deckhands or Stewardesses. A mandatory Certificate is to have when working on board as Yacht Crew is STCW Security Awareness (MCA Approved for Yacht Crew). And we recommend as a minimum to get STCW Proficiency in designated Security Duties (PDSD Yacht crew) and if you are handling food on board a Food Hygiene Level 2 Certificate.

Food Hygiene Level 2 when Working in the Mediterranean and Caribbean

This online Food Hygiene Level 2 course is fully valid and accepted for yacht crew working across the Mediterranean and Caribbean. The course complies with EU Regulation 852/2004 — the European food safety standard enforced on all commercial vessels operating in European waters. Whether your yacht is based in Palma, Antibes, Monaco, Mykonos, or Antigua, this certificate is what port state control officers and captains accept as the recognised food hygiene qualification for crew on board.

The vast majority of superyachts in the Med and Caribbean are registered under international flag states — Cayman Islands, Marshall Islands, Malta, Panama — all of which recognise this CPD accredited Level 2 Award as the food hygiene standard for crew. Which Flag States Accept This Online Certificate?

If you are heading to the Mediterranean or Caribbean — which covers the vast majority of the superyacht fleet — this online Food Hygiene Level 2 is accepted on your yacht.

Cayman Islands (CIMA)
Most common flag state for large superyachts worldwide. CIMA requires crew in food handling roles to hold a recognised food hygiene qualification. This online CPD course meets that requirement in full.
Marshall Islands (RMMI)
Second most common flag state globally for superyachts. The Level 2 Award in Food Safety and Hygiene is the accepted standard for crew on board Marshall Islands registered vessels.
Malta (Transport Malta)
Common across the Mediterranean fleet. Food safety requirements for commercial yachts under Transport Malta are met by this certificate.
Panama
Accepted under EU Regulation 852/2004 and MLC guidelines. Standard qualification for crew on Panama-flagged yachts operating in international waters.
All other international flag states
The Level 2 Award in Food Safety and Hygiene is recognised as the industry standard across the superyacht fleet. One certificate, accepted everywhere you will actually work.
UK Red Ensign (MCA) — exception
UK-flagged yachts (a very small portion of international yachts) under the MCA require an in-person Food Hygiene Level 2 course. This online course does not qualify for MCA Approved vessels. What the Course Covers — and How It Applies on Board

As a stewardess you are not just serving at the table. You are managing the crew mess, monitoring food stock, checking expiry dates, handling provisioning for guests and crew, and working alongside the chef during charter. On a charter yacht operating with guests, every module in this course applies directly to what you do every day on board. Here is how each one maps to the real job:

  • Food safety principles and legal obligations — as interior crew you are legally responsible for the food you handle and serve. On a charter yacht this is not theoretical — port state control inspectors check that crew understand their individual responsibilities under EU Regulation 852/2004 and MLC requirements. This covers your duty of care from provisioning delivery through to guest service and crew mess management.
  • HACCP — Hazard Analysis and Critical Control Points — on a superyacht the HACCP plan covers the galley, the crew mess, provisioning storage, and every point where food is handled between delivery and service. As a stewardess you work within that plan daily — temperature logs, stock rotation, storage labelling, and cleaning schedules between service. Captains and port state control officers check HACCP compliance on charter yachts. Understanding it makes you a professional crew member that any captain wants on board.
  • Micro-organisms and food poisoning — you are managing food for guests who expect five-star standards and for crew who depend on the mess for every meal. Knowing how bacteria grow through improper storage, incorrect temperatures, or missed expiry dates is what stops an incident on board. On a charter yacht a food poisoning case affects guests, the captain, the vessel's charter licence, and your career. This module is operational knowledge, not theory.
  • Contamination hazards and controls — superyacht guests frequently have severe food allergies. As the stewardess managing table settings, service order, and communication with the chef, allergen management is your direct responsibility during every charter. This module covers cross-contamination between guest and crew food, between dietary requirements at the same table, and between raw and prepared food in the galley — all daily scenarios in the interior department.
  • Cleaning and disinfection — between charter guests, between meals, and between provisioning deliveries, the stewardess manages the galley cleaning rota alongside the chef. Correct product use on food contact surfaces, correct procedures between raw and prepared food areas, and ensuring every surface is safe before the next service. This is daily operations on any commercial yacht, not a one-off task.
  • Assessment — 15-question multiple choice quiz at the end. Score 80% or above and your digital certificate is issued the same day. If you do not pass first time you can retake immediately at no extra cost.
